Satay
Description: Thai-style chicken -or- pork BBQ
- Grilled chicken / pork marinated with Thai seasoning served with spicy peanut
sauce. ~Excellent appetizer~
Ingredients:

**Soak wood skewers ahead of time
Directions:
- Blend the coriander seed powder, cumin seed powder, pepper and tumeric powder
with galangal, lemon grass, garlic and salt using a blender or mortar &
pestle
- Combine chicken / pork, sugar and the mixture from the previous step with
the coconut milk and marinate for 1 hour.
- Thread the chicken / pork slices onto the wooden skewers.
- Boil the marinade sauce in a pot until slightly thickened.
- Grill chicken / pork on medium heat and brush the marinade sauce onto the
chicken / pork.
- Serve with peanut sauce and cucumber relish
Cucumber relish directions:
- Wash and slice cucumbers
- Mix vinegar, sugar and salt together, simmer over medium heat until the
sugar and salt has dissolved and the sauce has thickened slightly. Remove
from the heat and allow to cool. Before serving, pour the sauce over the cucumbers
and sprinkle chopped coriander, chili and shallots on top.
