Som Tum
Description: (Spicy Papaya Salad) - Papaya salad,
a traditional Thai dish from the Northeastern region (Isan). A favorite served
with sticky rice, grilled chicken and spicy grilled beef.
Ingredients:

Fresh vegetables: Chinese watercress, cabbage, and long beans
Garnish: cabbage and lime zest
Directions:
- Wash and peel the lime. Finely scrape the rind to obtain about 1 tablespoon
of zest. Squeeze the lime to obtain 2 tablespoons of juice.
- Pound garlic and chili together using mortar & pestle or blend if m&p
not available.
- Add papaya and mix with the chili mixture from step previous step. Season
with palm sugar, fish sauce, tamarind juice and lime juice. Add 2 tablespoons
of dried shrimp and combine well. Serve on a dish, sprinkle with lime zest,
the remaining dried shimp and ground roasted peanuts. Delicious with Chinese
watercress, cabbage, and long bean.
